Sparkling is relatively new to Sake. It's generally lighter in alcohol, and sweeter, with bubbles!
Futsu-shu is entry level large production Sake. There are fewer rules regarding its production, but generally has added brewers alcohol to enhance the flavour

Koshu is aged sake. Generally it ages in the tank and is drawn off to be bottled each year. a much refined taste, but quite rare and can be expensive
